We are Flo and Joe, friends brought together by a shared love of great food, fermentation and fine wine.


Flo grew up in the countryside learning to cook and prepare food at her mum’s apron strings. After a short stint writing about food, she couldn’t resist the warmth and hum of the professional kitchen and headed for London where she shook the pans in a multitude of establishments, some of which you might have heard of. 


A Sheffield native, Joe has been a musician for over a decade, travelling the world and eating lots of different food.

While both at a loose end and over a glass of red or two, the idea of TONCO was born.


We want people to get as excited about food as us, and to enjoy eating it as much as we enjoy making it. We’re always always excited to talk about food or anything else, so please don’t hesitate to get in touch!

Inspired by global cuisine and eclectic ingredients our menus emphasise bold flavours and insist upon fresh seasonal produce. From our 24 hour sourdough to our 24 day sauerkraut, our kimchi to our kisir, our pastrami to our pakoras, everything we make is made from scratch with very few exceptions.
